Tostadas (I made this bread too!)

Yes, it’s another in our series of “So-Easy-It’s-Not-Really-A-Recipe” recipes. And there’s plenty more where this came from  🙂

Tostada is a Spanish word meaning toasted. And here we have some wholewheat toast that’s topped with crushed tomatoes, garlic and a little salt. That’s all there is to it.

For a quick breakfast for two: roughly chop three tomatoes and cook them down gently in a pan over a medium heat with one clove of minced garlic. You can leave them fairly chunky or you can crush them down a little, to a thick paste. Either way, it’ll take about 8-10 minutes. Spread the cooked tomatoes thickly over your toast and top with a little chopped parsley, a drizzle of olive oil and a few flakes of sea salt.

You won’t believe how tasty three or four simple ingredients can taste!
